Jeff's Cream Tomato sauce with Prosciutto and Sun Dried Tomatoes

This is one of my favorite pasta sauces. I originally found a similar recipe on the FoodTV.com website for the cream, garlic and tomato base. I've experimented with various ingredients until I was happy and here it is. Enjoy!

Ingredients

  • 3 cloves garlic peeled
  • ½ cup heavy cream
  • 1 cup crushed tomatoes
  • ¼ cup prosciutto julienned (3 to 4 slices)
  • 1 tablespoon olive oil
  • ½ cup of sun dried tomatoes.
  • 1 cup green peas
  • Crushed red pepper to your liking
  • Salt and pepper
  • Parmesan cheese or freshly chopped herbs for garnish

Instructions

  1. Poach garlic cloves in the cream until tender. Add the crushed tomatoes, season with salt, pepper and crushed red pepper and simmer for 5 minutes. Puree in a blender, strain and set aside. In a large sauté pan, heat prosciutto and sun dried tomatoes in the olive oil. Add the peas and cook briefly. Season with salt and pepper. Mix in the tomato cream puree.
