Mexican Rice Recipe

Mexican Rice
Ingredients
  • 1 teaspoon olive oil
  • 1/2 cup diced onions
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced green bell pepper
  • 1/2 cup chopped tomatoes
  • 1 tablespoon chopped garlic
  • 3 cups chicken stock
  • 2 cups basmati rice
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons chopped fresh cilantro leaves for garnish
Instructions
  1. Heat the olive oil in a large pot over medium heat. Saute the onions, bell peppers, and garlic, and cook for approximately 5 minutes. Add the chicken stock, tomatoes and rice to the pot and stir gently. Bring the liquid to a boil, reduce heat and simmer for 20 minutes. Season with salt and pepper.
