A simple pasta recipe of Jeff's
Ingredients
  • 3 cups all-purpose flour plus more for dusting
  • 4 extra-large eggs
  • 1 teaspoon extra-virgin olive oil
Instructions
  1. Mound flour in the center of a large board. Make a well in the middle, and add eggs and 1 tablespoon oil. Using a fork, beat eggs and oil until thoroughly combined. Begin to incorporate flour, starting with the inner rim of the well. The dough will come together when half the flour is incorporated. Keep working dough until all flour is incorporated.
  2. Start kneading dough using the palms of both hands. Once dough is a cohesive mass, remove it from the board; scrape up and discard any leftover bits. Lightly flour the board, and continue kneading for 6 minutes more. The dough should be elastic and slightly sticky. Wrap the dough in plastic, and allow to rest for 30 minutes at room temperature.
  3. Divide pasta into 2 pieces. Working quickly, roll out each sheet of pasta to the thinnest setting on a pasta machine, and place on a lightly floured board. Cut into strips any size you prefer. Bring 6 quarts of water to a boil and add 3 tablespoons of salt. Drop in pasta and cook until tender, 6 to 7 minutes.
